Quick Veggie Soup
Serves 4
Counts as one of your 5-a-day & is low in fat!
Ingredients 1 Leek-sliced 1 Parsnip-diced 1 Carrot-diced 1 Potato-diced 500ml vegetable stock (a stock cube is fine!) 2 tsp Wholegrain Mustard 2tbsp semi-skimmed milk
Method In a pan simmer all the veg in the stock until tender. Pour everything (stock included) into a blender or food processor & whizz until smooth. Pour back into the pan, add the mustard & milk, season to taste with salt & pepper & stir well. The soup will keep for about 3 days in an airtight container in the fridge.
The Carrot, Parsnip & Leek where from a bag of mixed veg from The Co-Op costing just £1, the potato was 48p & the rest of the ingredients were from our store cupboard. The total approximate cost for the soup was £1.88p (47p per person).
Sausage Casserole
Serves 4 (Or 2 very hungry people!)
Ingredients A pack of 8 sausages (of your choice!) 1 tin chopped tomatoes 1 onion-sliced 2 carrots-sliced 1 large potato-cubed Worcestershire sauce Salt & Black pepper Boiling water
Method Brown the sausages under the grill, then place in a large pan along with the carrots, onion & potato. Pour over the tinned tomatoes & add enough boiling water to cover everything. Stir well then add a splash of Worcestershire sauce & season well with salt & black pepper. Cover & simmer for about 25-30 minutes or until the Veg is tender. Serve with crusty bread.
We used ingredients from various supermarkets, the Veg was from a mixed bag from the Co-Op costing £1, the tinned tomatoes were from Lidl at 41p & the sausages from Sainsbury’s where we purchased 2 packs for £3. The total approximate cost was £3.06p (76.5p per person).
